TNT Tuesday - Creamy Macaroni & Cheese


For this week's TNT Recipe, I am sharing with you my most requested dish. Anytime I am invited over for a potluck dinner, or any family gathering such as Christmas, Thanksgiving, Easter, or any other holiday that requires a bunch of family cooking, this is what I am required to bring. No ifs, ands, or buts about it. This recipe was given to me by my good friend Evelyn years ago. My immediately family is always mad because I will not make this throughout the year just for regular ole' home dinner because then it ain't special when it comes time to take everywhere else! LOL

Creamy Macaroni and Cheese
8 oz. elbow macaroni and cheese
4 c. shredded mild cheddar
8 oz. sour cream
1 c. mayonaise
2 T chopped onion (optional)
1 c Cheese-It crackers, crushed
* Bowl noodles and drain;
* Mix noodles, cheese, sour cream, mayonaise and onions until well mixed.
* Put mixture in greased 9x9 pan, sprinkle top with crackers.
Cook in 325 degree oven for 35-40 minutes or until edges start toasting.

Monday Menu Plan


Wow! Do you believe it is already Monday again! Did you plan your weekly menu last week and did things go smoother because you did so? I hope so.
Here is my tentative plan for this week. I have so much going on over the following week and weekend I really needed to have my dinner plan ready to go for this week!
Monday - BBQ Pork Chops, Macaroni N' Cheese, veggie
Tuesday - Meatballs and Italian Pasta, Cresent Dinner Rolls
Wednesday - Potato Stroganoff, veggie
Thursday - Family Night Out for dinner
Friday - Breakfast for Dinner - pancakes, scrambled eggs, bacon
Saturday - Jambalaya
Sunday - BBQ Chicken, Rice, Steamed Veggies

Frugal Fridays: "I eat Organic. How can I save on those items"

A lot of people these days are trying to follow a more healthy lifestyle, which sometimes include eating organic foods. I will admit that I do not buy organic products myself, at least not on a regular basis, but I have noticed that organic items seem to be a little bit more pricey. To help those of you that prefer the organic food items, I wanted to provide some websites where you may be able to obtain some coupons for those items and try to buy as "frugally" as possible.

Another thing you want to keep in mind, a lot of coupons for a brands "regular" items, will also be able to be used on their "organic" counterpart, if that brand does in fact sell them. For instance, a coupon for Bertolli pasta sauce, would most likely be able to be used to purchase the regular line Bertolli pasta sauce, or their organic pasta sauce, unless the coupon specifically states otherwise. DO NOT simply go by what is pictured on the coupon, you would be surprised how often the picture on the coupon does not accurately represent what the coupon is actually for - - read the print!

CVS - Money Makers This Week 1/31 - 2/6

After looking at the CVS sales paper this week and figuring out what would work best for me, below is the scenario I decided to use for this week. Keep in mind I did not have any ECBs (Extra Care Bucks) to work with since I had previously spent them so I was starting from scratch this week. My main goal was to buy a few things, not come out of pocket a whole bunch, and have some ECBs left over for other stuff.

#1 Checkout
Purchased Dove Men+ Care Face and Body Wash $5.49
Used $1.25 off coupon from 2/1 paper
Total OOP (Out of Pocket): $4.25
Earned: $5.49 ECB


#2 Checkout
Purchased Dove Men+ Care Face and Body Wash $5.49
Purchased Colgate Max Fresh Toothpaste $2.99
Used $1.25 off coupon for body wash
Used .50 off coupon for toothpaste
Used $5.49 ECB from #1 checkout
Total OOP: $1.24
Earned: $5.49 for body wash and $2.00 for toothpaste = $7.49 ECBs!!!


So, you see - I spent a total $5.49 of my hard earned cash; actually received $13.97 worth of product and then left the store with $7.49 in ECBs to use on next trip - - - so technically I got all this stuff for "Free" plus they paid me $2.00!!! Make sense??
